    TURKEY AND SPINACH MANICOTTI (Tuesday)
    Makes 14 pieces

    Preparation time: 20 minutes

    Cooking time: about 30 minutes; standing time: 10 minutes

    1 1/2 pounds ground turkey breast

    1 (10-ounce) package frozen chopped spinach, thawed, excess liquid squeezed out

    1 teaspoon Italian seasoning

    1/4 teaspoon salt

    1/4 teaspoon pepper

    1 (26-ounce) jar no-salt-added or regular marinara sauce

    14 manicotti shells

    1 (14-ounce) can fat-free chicken broth

    1 cup shredded part-skim mozzarella cheese

    Freshly grated parmesan cheese, if desired

    In a large bowl, mix together ground turkey, spinach, Italian seasoning, salt and pepper. Spread 1/2 cup of marinara sauce in a 10-inch square baking dish. Fill the uncooked manicotti shells with meat mixture; place in dish. (You may have to squeeze them in, but they will fit). Pour broth and remaining sauce evenly over manicotti. Gently press shells into liquid. Cover; microwave on high (100 percent power) 25 minutes. Sprinkle with mozzarella cheese and microwave on high 3 minutes, uncovered. Let stand 10 minutes. Serve and garnish with parmesan if desired.

    Note: Make the day ahead; cover and refrigerate overnight. Add 5 minutes to cooking time.
