The Pizza Dough: (Makes 2 crusts)
*1 package rapid rise yeast
* 1 cup warm water (8 oz) (100 – 110F)
* 2 tablespoons white vinegar
* 2 1/2 cups all purpose flour +/- 1/4 cup based on humidity
* 1 tablespoons of olive oil
* 1/2 teaspoon of granulated sugar
* 2 1/2 teaspoon of salt
* Extra flour for rolling out the crust
The toppings
1 sliced onion
Salt to taste
8 oz extra lean ground beef
4 oz Tillamook Monterey Jack Cheese - grated
4 oz Tillamook Extra Sharp Cheddar Cheese - grated
4 oz Tillamook Medium Cheddar Cheese - grated
6 slices of bacon, precooked and diced
(Optional) - 40 pickle slices
Spaghetti sauce of your choice
In a large bowl, dissolve sugar, and yeast, in water.
Wait 10 minutes until all yeast is dissolved/proofed
Add oil, vinegar, salt and flour and stir in a mixer until incorporated. Mix on a medium speed for approximately 5 minutes until the dough forms a cohesive ball.
Cover with a damp cloth and store in a warm humid place for 1 1/2 to 2 hours.
Divide dough into 2 equal portions.
Roll each portion into a ball. You want a dough ball without visible seams on top.
Cover dough balls with damp cloth and let rise.
The toppings
Over extremely low heat, put sliced onions in a saucepan and cover. Stir occasionally until onions start to brown (about 45 minutes). Add salt and remove from heat.
While onions are cooking, add beef to a separate frying pan, and cook until browned. Add salt as necessary
Preheat oven to 500
Combining the dough and the toppings!
Place dough ball on lightly floured surface and lightly flour the top. Using rolling pin, roll out a thin circle, using lots of flour on both sides to prevent sticking.
Top with spaghetti sauce, grated cheese mixture, then add half the ground beef, half the bacon, and half the onions. Add 20, or so, pickle slices to each pizza.
Bake in a 500+ degree oven for 10-15 minutes, until bottom of crust is golden. To check doneness, gently lift the the pizza using either a fork or a spatula/pancake flipper to reveal the underside of the crust. The pizza is done when the underside has considerable browning.
