    Baked Pork & Sauerkraut


    3 pounds pork roast
    2 pints water
    1/2 teaspoon salt
    1/4 teaspoon pepper
    1/2 cup all-purpose flour, sifted
    2 tablespoons vegetable oil
    1/4 cup brown sugar
    3 pounds sauerkraut

    Recipe



    Preheat oven to 325 degrees F.

    In a stock pot at moderate heat, add the pork shoulder and cover with
    Water. Boil the pork for 2-1/2 hours or until tender. Remove from
    Water and rub with salt.

    In a skillet at moderate heat, add oil and quickly sear the pork.

    Place pork in roasting pan, sprinkle with brown sugar, and smother in
    Sauerkraut.

    Bake for 30 to 45 minutes or until sauerkraut is well cooked. Remove
    From the oven and serve.
