Glazed And Grilled Pork Chops
2 cups hot water
1/2 cup kosher salt
1/2 cup brown sugar
6 cups ice water
1/4 cup lime juice
1/4 cup ketchup
1/4 cup brown sugar
3 tbsps. honey
1 tbsp. crushed red pepper flakes
4 1-inch thick rib chops
1/4 cup olive oil
2 tsps. ground black pepper
Recipe
Prepare grill so one side has a medium-high fire (direct) and the other side is
not lit (indirect).
Dissolve salt and sugar in hot water.
It helps to set the bag inside a large bowl in case of spills or leaks.
Add ice water to brine.
This will cool the brine quickly so you can add the pork chops.
Seal the bag and refrigerate for one to two hours.
Just before cooking, dry chops to remove excess brine.
Combine ingredients for the glaze and set aside.
Trim brined pork chops.
Rub chops with oil and pepper.
Over heated side of grill, cook chops for 6 minutes making grill marks.
Flip, glaze, and place chops over indirect heat side.
Grill 6 to 8 more minutes (to 150°).
Makes 4 servings.
