    2 oranges, divided

    1 pound pork tenderloin

    ¼ cup thinly sliced basil leaves

    2 cloves garlic, minced

    salt & pepper

    ¼ cup orange marmalade




    Recipe



    To make marinade, grate zest and squeeze juice from 1 orange. In large plastic food-storage bag combine juice and zest with basil and garlic. Sprinkle pork with salt & pepper; add to marinade. Refrigerate at least 2 hours. Preheat oven to 325 degrees. Place pork on rack in roasting pan. Roast 30 minutes. Combine marinade and marmalade; brush over pork. Continue roasting, basting occasionally, until thermometer inserted into center reaches 160 degrees, 15 to 30 minutes. Let stand 5 minutes before slicing. Cut remaining orange into sections. Serve pork with orange sections.
