    Skillet Sausage with Potatoes and Rosemary

    Makes 4 to 6 servings

    tablespoon vegetable oil

    3

    cups diced red skin potatoes

    1

    cup diced onion

    1

    pound BOB EVANS® Original Recipe Roll Sausage

    1/2

    teaspoon dried rosemary

    1/4

    teaspoon rubbed sage


    Salt and black pepper to taste

    2

    tablespoons chopped fresh parsley

    Recipe



    Heat oil in large skillet over medium-high heat 1 minute. Add potatoes; cook 5 to 10

    minutes or until slightly brown, stirring occasionally. Add onion; cook until tender. Add

    crumbled sausage; cook until browned. Add rosemary, sage, salt and pepper; cook and

    stir until well blended. Transfer to serving platter and garnish with parsley. Refrigerate

    leftovers.
