Smoky Chops or Chicken

Sauce:
3/4 cup maple syrup
3/4 cup ketchup
3 tablespoons prepared mustard
Recipe
Meat dish:
4 to 6 thick-cut pork chops or 8 to 12 thin-cut pork chops or 3 to 5 pounds chicken thighs or fryer parts
Spice Islands hickory smoke salt
2 large onions, sliced
Simmer sauce ingredients 10 to 15 minutes. Sprinkle all sides of meat liberally with smoke salt. Place in a roaster with onions and cover with sauce. Cover the pan tightly and bake at 325 degrees for a minimum of 2 1/2 hours or a maximum of 4 hours. Place on gray coals for outdoor barbecue.
To prepare as a casserole, cover bottom of baking dish with onions. Place seasoned meat on top. Cover with the sauce and bake at 325 degrees for 2 1/2 to 4 hours, covered. Brown at 450 degrees for 15 minutes, if needed. Serves 4 to 6.
