    Southwestern Rubbed Pork Loin with Spicy Ginger Sauce

    5 lbs. Pork Loin – trimmed
    3 Tbls. Chipotle powder
    2 Tbls. Brown sugar
    2 tsp. cinnamon
    2 tsp. Allspice
    Kosher salt – to taste
    2 Tbls. Olive oil
    3Tbls. Fresh ginger-chopped.


    Sauce:
    3 cups champagne vinegar
    1 cup red wine vinegar
    2 cups sugar
    2 jalapenos – sliced in half
    3 Tbls. Fresh Garlic – chopped
    ½ cup green bell pepper – diced
    ½ cup red bell pepper – diced
    ½ cup green chilis
    Salt and Pepper – to taste



    Mix the dry ingredients. Rub the pork loin with the oil, and dredge with the dry rub.
    Grill at 350 degrees or until the center reaches 170 degrees. Let rest, serve with sauce.



    Reduce the vinegar, sugar and peppers by half and strain.
    Stir in bell peppers and season to taste
