Stuffed pork ribs
2 ½ lbs fat ribs (when shopping, get the bones chopped and a pocket cut in the meat)
1/2 C dried fruit
1-2 cooking apples
2 tablespoons raisins
1 tablespoon of chopped almonds
salt

Recipe
Soak dried fruit 12 hours beforehand. Water the pot (15 minutes). While clay pot is soaking, strain the dried fruit. Peel apples, remove cores, and slice. Mix dried fruit and apple pieces with raisins and almonds. Wash both the inside and outside of meat, dab dry, and sprinkle with salt and pepper. Fill with fruit mixture. Fasten stuffed meat pocket using white cotton thread or pin with skewer. Place ribs in drained clay pot, cover with lid and place in a cold oven. Bake at 450° F for 1 ½ to 2 hours or until tender. Served in Scandinavia with potatoes or potato dumplings and salad.
