Tangy Pork Chops
32 ounces pork chops (1/2 inch thick) -- (4)
1/2 teaspoon salt -- optional
1/8 teaspoon pepper
2 medium onions -- chopped
2 celery ribs -- chopped
1 large green pepper -- sliced
14 1/2 ounces stewed tomatoes (1 can)
1/2 cup ketchup
2 tablespoons cider vinegar
2 tablespoons brown sugar
2 tablespoons Worcestershire sauce
1 tablespoon lemon juice
1 teaspoon beef bouillon
2 tablespoons cornstarch
2 tablespoons water
6 cups hot cooked rice -- optional

Fancy enough for company, these mouth-watering pork chops also make a great
family meal. I usually have all the ingredients on hand. Since my husband
and I just had our first child, this recipe is so convenient - I start it
during naptime for a no-fuss supper later.
PREP 15 min., COOK 330 min., TOTAL 345 min.
Place chops in a 3-qt. slow cooker; sprinkle with salt if desired and
pepper. Add the onions, celery, green pepper and tomatoes. Combine ketchup,
vinegar, sugar, Worcestershire sauce, lemon juice and bouillon; pour over
vegetables. Cover and cook on low for 5-6 hours. Mix cornstarch and water
until smooth; stir into liquid in slow cooker. Cover and cook on high for 30
minutes or until thickened. Serve over rice if desired.

[Mary's Notes: Supper 3/15/07. Oh boy was this ever good. My husband said
it's the best thing he's had out of the crockpot! I loaded it with a lot
more spices than called for in the recipe and it had wonderful flavor...not
the washed out flavor you usually get with crockpot recipes. The original
recipe called for 4 servings but I made 8 servings by splitting my very very
thick chops in half. Changes Made/Products Used: boneless pork loin chops,
no salt due to my dietary requirements, freshly ground McCormick's
Peppercorn Medley, no celery as I didn't have any, 2 green bell peppers
instead of 1, Great Value No-Salt-Added Diced tomatoes, Hunt's No-Salt-Added
Ketchup, Heinz Cider Vinegar {most are flavored cider this is the real
thing}, Lea & Perrins Worcestershire Sauce, Wyler's Sodium Free Beef
Bouillon granules and Hy-Vee Instant Long Grain Rice. I added lots of onion
powder, garlic, Mrs Dash Southwestern Chipotle seasoning. MasterCook
