    Apple Cornbread Stuffed Chicken Breast

    Ingredients:
    1 Tbsp olive oil, 1 oz red bell pepper
    1 oz. Celery, 1 oz. yellow onion diced
    ½ Serrano pepper minced
    ¼ Cup pecan pieces
    1 tsp fresh sage minced
    1 or 2 green apples cubed ½"
    2 Cups cornbread cubed 2"
    ½ Cup chicken Stock
    Salt and Pepper to taste

    Instructions:
    Heat oil in a sauté pan and add peppers, onion, celery, pecans and sage. Cook over medium heat until vegetables are just starting to soften. Transfer to a mixing bowl and add remaining ingredients and mix well. Cool in the refrigerator before stuffing chicken.

    Apple Cornbread Stuffed Chicken Breast

    Ingredients:
    4-6 Chicken breasts, double lobe, skin on
    Apple Cornbread Stuffing
    Salt and Pepper to taste

    Instructions:
    Trim any obvious fat from chicken and lay skin side up on work surface. Starting at the bottom (pointy end) separate the skin from the meat, work upward until just the top most skin is still attached. Using an ice cream scoop or tablespoon, place stuffing on exposed meat and spread an even layer across the breast. Cover stuffing with skin and season with salt and pepper. Repeat with remaining chicken and stuffing. The chicken may be cooked in the oven or on the stove top.
