    BBQ Chicken with Mustard Glaze

    4 whole chicken breasts, skinned & boned
    1/3 c each Dijon, whole grainy & honey mustards
    2 T fresh lemon juice
    2 T olive oil
    1/3 cup minced fresh herbs (tarragon or basil are good choices)
    salt & pepper to taste

    Recipe



    Whisk together the 3 mustards, lemon juice, oil & herbs to make marinade.
    Place flattened breast in a shallow glass dish & brush both sides with the mixture. Set aside at room temp while heating coals.
    Oil grill. Place grill 4" above hot coals. Sear chicken 4-5 minutes on each side.
    Brush with marinade again, season with salt & pepper.
    Continue to cook about 20-25 min or til golden brown, nicely charred & tender.
    Allow chicken to rest 10 minutes before serving allowing juices to absorb.
