Baked Coconut Chicken Tenders
1 1/2lbs of frozen chicken breast tenders (defrosted)
4 oz of unsweetened dried coconut (used the medium size from Whole Foods bulk bin)
5 Tbls of unsalted butter
1 Tbsp of paprika
Salt & pepper to taste (aprox. 1-2 tsps each)
Directions
Pre-heat oven to 350
Melt butter in a microwave safe bowl and place in a container large enough to dip a chicken piece into.
Mix coconut with seasonings and place in a container or on a plate large enough to hold a couple of chicken pieces.
Dip chicken in butter then dredge in seasoned coconut.
Lay on a baking sheet and sprinkle any remaining mixture on pieces.
Bake 25-40 minutes or until done depending on size of tender pieces and your oven.
Serving size is approximately 3 chicken tenders.
