    CHICKEN CACCIATORE

    Makes 4 to 6 servings
    8 ounces fettucine, cooked as directed on package
    2 tablespoons flour
    1 teaspoon Italian seasoning
    4 skinned, boneless chicken breast halves (about 1 pound)
    2 tablespoons olive oil
    2 cups (8 ounces) sliced fresh mushrooms
    1/2 cup chopped onion
    1 (26 ounce) jar roasted garlic pasta sauce
    1 cup (4 ounces) shredded Mozzarella or Provolone cheese


    Recipe



    In shallow dish, combine flour and Italian seasoning. Coat chicken with
    mixture. In large skillet, over medium-high heat, brown chicken in hot oil;
    remove chicken from skillet. Add mushrooms and onion to skillet; cook and stir
    until tender. Add pasta sauce and chicken. Cover and simmer 15 minutes or
    until chicken is fully cooked. Top each chicken breast with cheese. Serve with
    hot pasta.
