Chicken Cakes
3 cups diced cooked chicken
1 cup saltine cracker crumbs, divided
2/3 cup light mayonnaise
4 ounce jar sliced pimentos
1/4 cup sliced scallions
2 tablespoons lemon juice
1/2 teaspoon salt
Recipe
Mix 1/2 cup cracker crumbs and rest of ingredients and form into 8 patties, about 1/2-inch thick. Coat with rest of cracker crumbs. Heat 2 teaspoons vegetable oil in a large, nonstick skillet over medium-high heat. Cook patties in hot oil about 3 minutes per side until golden.
