Chicken Fried Chicken with Mushroom Gravy

Chicken Fried Chicken
8 Skinless Chicken breast
2 cups buttermilk
½ cup sour cream
2 Tbsp. Dijon mustard
Mushroom Gravy:
2 pkg. sliced mushrooms
¼ onion, small dice
2 cups chicken stock
½ cup cream
flour, for thickening
1½ cups flour
1 tsp. cayenne pepper
Salt & Pepper, to taste
Mix all of the wet ingredients in a bowl and then put the chicken in the mixture and let the chicken marinade for 1 hour or overnight.
Mix all of the dry ingredients together and set aside.
Meanwhile remove the chicken from the marinade. Dredge the chicken in the flour mixture. When you are done you are ready to fry,
Have a skillet with oil that has been heated to 360?, place the chicken in the hot oil turning it over as little as possible. Fry to a golden brown until internal temperature has reached 165 F. Serve.
Mushroom Gravy:
Sauté the Mushrooms and onions until they are soft, add the flour to make a roux, add the chicken stock and cream( I like to add just a touch of wine for a richer taste) bring to a boil or until the gravy is thickened. Serve on top of the chicken fried chicken.
