    Chicken Loaf with mushroom sauce:

    2 cups chopped cooked chicken @ .39 lb. approx. 3 lbs $1.20
    1 cup soft bread crumbs from loaf @ .55 .30
    ½ to 1 cup cooked rice @ .89 for 8 cups .10
    2 T. minced onion @ .39 lb. .10
    T. minced dry parsley @ .50 for 10 T. .05
    2 T. minced celery @ .79 stalk .10
    2 eggs, beaten @ .79 a dozen .15
    1 c. milk & chicken stock mixed .25
    salt and pepper to taste .05

    Mushroom Sauce:

    ¼ cup. margarine @ $ .50 for 2 cups $ .05
    ¼ cup of flour .05
    1 ½ cups chicken stock (free) and milk mixed .15
    1 4 oz. can of chopped mushrooms .50
    2 T. sherry (optional .25

    Total: $1.00

    Total for 4 to 6 servings: $2.30

    Mix the ingredients well adding the eggs last. Bake about 40 minutes in a greased loaf pan at 350 degrees.

    Mushroom Sauce:

    Melt margarine in a sauce pan and add flour cook over low heat till thick, Gradually add the chicken stock and milk whisking all the time, cook till thick then add the mushrooms and sherry. Serve hot over the slices of chicken loaf.
