Chicken Marsala
Tangy fresh vegetables flavors this dish, enjoy with mixed greens salad and Marsala Wine.
Ingredients:( for 2)
2 boneless, skinless chicken breasts
1/2 cup mushrooms sliced
1/2 cup green onions, sliced
1/4 spoon of garlic
1 cup of marsala wine
salt & pepper to taste
Salt and pepper the chicken breasts, coat lightly with flour.
In a large sauté pan, heat the oil till almost smoky. Add the chicken breasts and sear on each side till cooked (about 2 minutes per side). Add the mushrooms, garlic and green onions. Cook 2 minutes. Add marsala wine, and pinch of flour. Turn the heat off ,cover and let cook for 30 seconds,. The chicken should be golden brown but moist. Stir to coat the chicken well and serve immediately on a bed of rice pilaf.
