1 c. fine bread crumbs
3 boneless chicken breasts
4 T. Parmesan cheese
2 t. basil & oregano
1/4 t. garlic powder
1/2 c. apple juice
1/3 c. chopped scallions
2/3 c. melted margarine
1 beaten egg + 2 T. water
Recipe
Mix bread crumbs,cheese,and garlic powder together in a bowl. Beat egg with water in a seperate bowl. Dip chicken in egg mix then dip in crumb mixture. Place in a baking pan sprayed with Pam, and bake at 350 for 1 hr. . Melt butter in microwave.
Add the scallions,juice and spices and pour over chicken. Bake an additional 5 min. and serve.
Mix 1 c. flour 1/4 t. garlic powder
1/2 t. basil 1/2 t. dill weed
Rinse scallops in cold water. Flour in plastic bag. Place scallops in collander and sift off excess flour. Heat oil in large skillet.
Add scallops and spices. Saute till evenly golden brown. Garnish with fresh parsley or a sprinkling of chopped scallions.
For added tenderness I often add 1 T. of Adolph's no salt no MSG
tenderizer (blue cap).
