Creole Seasoned Roast Chicken

* Whole Chicken (split in half)
* 1 Stick Butter (softened)
* 4 T Creole Seasoning
* 1 T Olive Oil
Pre heat oven to 350 degrees. Mix
Butter and 2 T Creole Seasoning
and Mix well. Stuff the chicken under
the skin with the butter/creole mixture.
Rub Chicken with oil on both sides
and season with remaining creole
seasoning on both sides. Roast in
the oven until done at 160 degrees.
