    I make quite large quantities of this filling, roll it into small balls, wrap in seran & freeze, then just defrost as much as I need to spread on fresh chicken breasts.

    List of Ingredients




    Feta Chicken

    1 package frozen chopped spinach
    3 tspns dried basil
    3 tsp dried tarragon
    1 onion (finely diced)
    1 clove garlic
    Feta cheese (enough so that the mixture looks green & white )
    salt & pepper

    Recipe



    Saute onion until just translucent, chuck in a bowl & add the rest of the ingredients, mix well.

    Flatten chicken breast, smear mix all over one side then roll up. lightly brush with oil & bake with the join underneath (approx 20 mins). Slice on an angle & "fan out" so that you get a spiral effect - excellent presentation

    I always sprinkle some Francois seasoning over the top lightly prior to baking, but a small sprinkle of salt & pepper could be substituted.
