    HONEY BARBECUED CHICKEN
    Serves 4

    1 whole fryer chicken (2-1/2 to 3 pounds), quartered
    1 teaspoon dry mustard
    1/4 teaspoon salt
    2 tablespoons honey
    3 cloves garlic
    1-1/2 teaspoons dried marjoram, crushed
    1/4 teaspoon ground pepper
    2 tablespoons balsamic vinegar

    Rinse chicken quarters, removing skin if desired, and pat dry with paper
    towels. Combine garlic, marjoram, mustard, salt and pepper; rub mixture into
    chicken. Cover chicken and refrigerate at least 2 hours. Using a grill with
    cover, arrange coals around drip pan. Place chicken pieces, bone side down, on
    grill rack over medium-hot coals. Close grill cover and grill 50-60 minutes or
    until chicken is tender and juices run clear.
