HONEY CHICKEN WITH APPLES

2 fryers, cut into pieces
Salt, pepper and garlic powder to taste
6 tablespoons margarine, melted
8 apples, cored, peeled and quartered
1/2 cup honey
1/2 cup apple juice
2 tablespoons brown sugar
2 teaspoons grated lemon rind
2 teaspoons grated orange rind
1/2 cup orange marmalade
1/4 cup sherry
Recipe
Sprinkle chicken pieces with salt, pepper and garlic powder. Melt the
margarine. Place the peeled apples around edges of a 9" x 13" casserole.
Place chicken in the center. Drizzle all with melted margarine. Roast in
325{d} oven for 45 minutes. Drain liquid.
Heat together the apple juice, honey, brown sugar, lemon and orange rind,
and sherry. Baste chicken and apples with mixture. Bake 30 minutes longer,
basting every 10 minutes until rich, golden brown. Brush orange marmalade
over chicken and apples and bake 5 to 10 minutes to glaze.
Serve apples as an accompaniment to chicken. Extra apples can be glazed in
separate pan, if desired, to serve with chicken or meat.
