Low Carb Chicken Strips

2 skinless, boneless chicken breasts 1 egg, beaten
1/2 C Parmesan cheese, grated
1/2 C Romano cheese, grated
1 tsp. pepper
1 tsp. Italian seasonings
1/8 C (1/4 stick) butter
1/8 C olive oil
Serves 2 as Main Course, 4 as Appetizer
Recipe
Combine the two cheeses (if you don't have both kinds, don't worry,
the recipe works just fine with one variety), the pepper and Italian
seasoning.
Slice chicken into long strips. Dip chicken pieces into the egg then
dredge in the cheese mixture. Use more cheese as needed.
Heat butter and oil over medium-high heat and sauté chicken strips
for about 4-5 minutes per side or until cooked through. Serve
immediately.
