Melt in Your Mouth Chicken
1- 3lb. chicken (boil until tender)
1 can cream of chicken soup
2 cups chicken broth
1 stick melted margarine
1 cup buttermilk (1 cup milk, 1 tablespoon lemon juice; let sit for 5 minutes, mix well)
1 cup self rising flour
1 tsp. salt
1/2 tsp. pepper
Recipe
Cube chicken and place in greased casserole dish. Combine the cream of chicken soup and the chicken broth, heat until soup is incorporated, and pour over chicken. Combine margarine, buttermilk, flour, salt and pepper; pour over above to make crust.
Bake at 425 for 30 minutes.
