Nutty Chicken Dijon
1 medium red or green pepper, cut into strips
5 tsp. PLANTERS Peanut Oil
1 lb. boneless skinless chicken breasts, cut into thin strips
1/4 cup GREY POUPON Dijon Mustard
2 Tbsp. dry white wine
1/4 tsp. cornstarch
3 Tbsp. PLANTERS Dry Roasted Unsalted Peanuts
2 cups hot cooked MINUTE White Rice
Recipe
COOK peppers in 2 tsp. oil in skillet on medium-high heat until
tender-crisp. Remove from skillet; keep warm.
COOK and stir chicken in remaining oil in same skillet until cooked
through. Remove from skillet; keep warm.
BLEND mustard, wine and cornstarch; add to skillet. Cook and stir on
medium-high heat until mixture thickens and boils.
RETURN chicken and peppers to skillet; heat thoroughly. Stir in
peanuts. Serve over rice.
