OVEN-FRIED CHICKEN WITH BUTTERMILK GRAVY

1/2 cup fine dry seasoned bread crumbs
2 tablespoons grated Parmesan cheese
1/2 teaspoon paprika
3 pounds chicken pieces, skin removed
3 tablespoons butter or margarine, melted
1 1-ounce envelope chicken gravy mix
1-1/3 cups buttermilk
Recipe
Preheat oven to 425°F. Spray a shallow baking pan with non-stick vegetable spray.
In a shallow dish, combine bread crumbs, Parmesan cheese, and paprika; set aside.
Rinse chicken; pat dry with paper towels. Brush chicken with some of the melted butter. Dip chicken into crumb
mixture, turning to coat. Arrange chicken in prepared baking pan.
Bake 30 to 35 minutes or until tender and no longer pink.
In a small saucepan, prepare chicken gravy mix according to package directions using the buttermilk instead of
water. Serve with the chicken.
