Olive Oil Braised Chicken with Fried Cheese

4 Pieces Chicken Hind Quarters
5 cups Olive Oil
1 sprig Rosemary
8 each Whole Peppercorns
6 each Juniper Berries
2 each Bay Leafs
5 cloves Peeled Garlic
2 tsp salt
1 T Olive Oil from the Chicken
4 each Heber Valley Banana Pepper Juustoleipa Cheese
In a sauté pan sear the chicken quarters skin side down until slightly browned.
Put remaining ingredients into a sauce pan and bring to a simmer.
Put the chicken in a pan and cover with the oil mixture. Plastic wrap and aluminum foil.
Bake in a 275 degree oven for 4 hours.
Remove from oven but leave in the oil.
Heat 1 T olive oil in a sauté pan and cook the cheese about 1-2 minutes each side or until golden brown.
