Potato Chip Chicken Fingers
1 whole chicken breast
6 ounces potato chips (plain, barbecue or sour cream)
1 egg
2 tablespoons milk

Preheat oven to 400 degrees. Cut chicken into finger-sized
pieces. Fill a large Ziploc bag with potato
chips and crush with a wooden spoon. In a small bowl, whisk the
egg and milk. Dip the chicken pieces
into the egg mixture. Then place the pieces in the bag. Shake
gently to cover. Place on an ungreased
cookie sheet. Bake for 20 minutes, flipping once during the
cooking time. Serve with barbecue sauce,
ranch dressing or salsa.
