ROASTED CHICKEN BREASTS WITH ROSEMARY APPLES (Saturday)
Makes 4 servings
Preparation time: about 15 minutes
Cooking time: chicken: 20 to 25 minutes; apples: 15 minutes
4 (5- to 6-ounce) boneless, skinless chicken breasts
1 half clove garlic
1 tablespoon extra-virgin olive oil, divided
1/4 teaspoon salt
1/4 teaspoon pepper
2 Granny Smith apples, coarsely chopped
2 tablespoons dry white wine
2 sprigs rosemary
Heat oven to 400 degrees. Rub each chicken breast with piece of garlic. Season with salt and pepper. Transfer to baking sheet lined with nonstick foil. Drizzle with 1 teaspoon oil. Roast in oven 20 to 25 minutes.
Meanwhile, heat remaining oil in a small saucepan on medium heat. Add apples, wine and rosemary and cook 15 minutes, stirring until apples are golden and softened. If pan becomes dry before apples are soft, add a tablespoon of water and keep cooking. Remove rosemary sprigs. Arrange chicken on large platter and spoon apples on top. Serve.
