Recipe Introduction
Chickens are descended from the wild red jungle fowl of India. They have been domesticated for at least 4,000 years. But, it wasn't until the 1800's that they became a mass-produced commodity for our dining room tables. In honor of Chicken Day... chickens want you to EAT MORE BEEF!

BORDERTOWN CHICKEN
1 chicken, boiled and boned
1 onion, chopped
1 green pepper, chopped
1 lb grated cheese
1 tablespoon chili powder
1 can cream of mushroom soup
2 cans cream of chicken soup
1 can tomatoes and green chilies
12 flour tortillas
chicken broth saved from boiling chicken
Recipe
1. Preheat the oven to 375 degrees F (175 degrees C).
2. Grease a 3 quart casserole dish or a 9"x13" pan. Line up all the ingredients except for the cans. Use 1/3 of each ingredient per layer. Dip the tortillas in the saved chicken broth before adding them to the layers.
3. Layer the ingredients in your baking dish in the following order: dipped tortillas, chicken, onion, green pepper, chili powder, cheese. Repeat the layers 2 more times.
4. In a medium mixing bowl, combine the cans of soup and can of tomatoes and chilies. Mix well and pour over the top of your layers. Bake for 45 minutes or until bubbly.
