Smoked Chicken Leg Quarters
8 Leg Quarters – rinsed and dried, reserved
1 cup olive oil
½ cup Lime juice
2 Tbls. Garlic – minced
1 tsp. Sea Salt
1 tsp. black pepper
½ tsp. Cajun Spice
2 Tbls. Basil
1 tsp. Thyme
2 Tbls. Tarragon
Mix all of the ingredients and pour over the leg quarters. Cover and refrigerate for four hours.
Grill over indirect heat (low heat) approximately 320 degrees, skin side up for 30 minutes. Turn over and grill for another 30 minutes or until the internal temperature is 180 degrees.
