Southwestern Salsa Chicken
Makes 4 Servings

4 (3 ounce) chicken breasts (boneless and skinless)
1 (16 ounce) jar mild thick chunky salsa
1 (2 1/4 ounce) can sliced black olives, drained
1/2 teaspoon finely chopped garlic
1/8 teaspoon salt
1/8 teaspoon pepper
Beat chicken breasts to uniform thickness. Spray nonstick frying pan with olive oil flavored spray. Saute garlic over low heat. Add chicke and over low medium heat cook until golden, turning once. Add salsa and cover. Continue to cook over low medium heat 30 to 40
minutes. Good served over rice. Top with olives.
