    Spanish Style Chicken and Rice from David

    1 2 1/2 to 3 pound broiler fryer chicken, cut up
    1 teaspoon salt
    1/4 teaspoon pepper
    3 tablespoons shortening
    1/2 cup chopped onion
    1 clove garlic, minced
    1 cup tomato juice
    2 cups chicken broth
    1 cup uncooked long-grain rice
    1 10 ounce package (2 cups) frozen peas, broken apart
    1/4 cup chopped canned pimiento

    Recipe



    Season chicken with salt and pepper. In skillet brown chicken in hot
    shortening. Add onion and garlic; cook till onion is tender but not brown.
    Add tomato juice and 1/2 cup of the chicken broth. Cover; simmer 20
    minutes. Add rice and remaining broth. Simmer covered 20 minutes. Add peas and pimiento. Simmer 5 minutes more or till peas are tender, stirring once or twice.

    Serves 4.
