The Captain's Chicken Tenders

2 large zipper closure food storage bags
1 pound boneless, skinless chicken breast tenders
1/2 cup buttermilk
2 cups cornflakes
2 cups Kellogg's Captain Crunch cereal
1 teaspoon salt
1/4 teaspoon black pepper
- no stick cooking spray
- barbecue sauce, honey mustard, ranch dressing (optional)

Directions
Arrange chicken tenders in one storage bag; pour in buttermilk. Seal bag; refrigerate. In second storage bag, combine cornflakes, Captain Crunch, salt and pepper. Seal bag. Finely crush cereal with rolling pin. Spray a 9x13-inch pan with no stick cooking spray. Remove 4 chicken tenders and place in cereal filled bag; shake to coat chicken. Arrange chicken in pan; repeat with remaining chicken. Spray chicken with no stick cooking spray. Bake in a preheated 425 F oven until chicken is no longer pink in center (12-14 minutes). Serve with favorite dipping sauces, if desired.
Amount: 4 servings
Note: If you don't have 1/2 cup buttermilk, stir together 1/2 cup milk and 1 1/2 teaspoons lemon juice. Let stand 5 minutes; stir.
