Turkey Croquettes
basic white sauce (*see recipe below)
3 to 4 cups of chopped cooked turkey
1/2 lb. cooked ham, finely chopped
1 egg, lightly beaten
1/2 tsp. grated nutmeg
3/4 cup freshly grated Parmesan cheese
salt and freshly ground pepper to taste
1 1/2 to 2 cups of dry unflavoured bread crumbs
oil for frying
Basic White Sauce Recipe
1 cup of milk
2 tbsp. of butter
2 tbsp. all purpose flour
salt to taste

Prepare the white sauce and let it cool to room temperature. Place turkey and ham in a large bowl. Add egg, nutmeg, 1/2 cup of Parmesan cheese, white sauce and salt and pepper. Mix thoroughly. Combine the remaining 1/4 cup of Parmesan cheese and the bread crumbs in a small bowl. Spread on a sheet of aluminum foil. Take a generous tablespoon of turkey mixture and form a small sausage. Roll in breadcrumb mixture to coat. Press crumbs lightly onto croquette. Repeat until all the turkey/ham mixture is used up. Pour oil 1” deep into a large skillet. Heat oil until a 1” cube of bread turns golden brown almost immediately. Using a slotted spoon, lower a few croquettes at a time into the hot oil. Turn croquettes, and when then are golden on all sides, remove from the oil with a slotted spoon and drain on paper towels. Serve immediately. Makes 6 servings.
Basic White Sauce Recipe
Melt butter in a small saucepan. Stir in flour to make a smooth paste. Gradually add milk and stir until thickened. Add salt to taste.
