Turkey Puffs

List of Ingredients
1 cup finely chopped cooked turkey (or chicken)
2 T. chopped pimiento
1 tsp. minced celery leaves
1 tsp. grated onion (or 1/2 tsp. onion powder)
salt & pepper to taste
1 egg, beaten
1 T. light cream
3-4 T. flour
pure vegetable oil to depth of1" in a deep skillet

Recipe
Combine turkey with pimiento,
celery leaves, onion, salt and
pepper. Blend egg and cream, add
to turkey mixture. Sprinkle flour
on gradually and mix in, using as
little as possible to make mixture
hold together but stay light and
moist. Heat pure vegetable oil to 350F.
Drop turkey mixture by teaspoonfuls
into hot oil. Fry about 3 minutes,
turning so puffs brown evenly. Drain
and serve hot. Serves 4-6.
