amaican Jerk Chicken with Caribbean Fruit Sauce
4 5oz chicken breast
¼ cup Olive Oil
¼ cup Jerk Spice or Caribbean Spice
For Sauce:
3 Tbls Olive Oil
½ Red onion, Diced
½ Ted Pepper, Diced
½ cup Pineapple, Diced, Fresh or canned
½ cup Cantaloupe, Diced
½ cup Honey Dew, Diced
¼ cup Raisins
¼ cup Lay Choy Sweet & Sour Sauce
2 Tbls Jerk Spice
1 cup Chicken Stock
1 cup Tropical Fruit Juice (I use Peach Mango)
¼ cup Corn Starch, add water to make slurry
¾ cup Sugar
In a large bowl mix chicken, ¼ cup oil & jerk spice. Let Stand.
In a sauce pan heat 3 Tbls. Olive oil and jerk spice. Add red onion, red pepper and sauté till done. Add pineapple, cantaloupe, honey dew & raisins and sauté for 2 minutes. Add Chicken stock, fruit juice, sweet & sour sauce & jerk spice and bring to boil. Add corn starch mixture to thicken. Make thick. Add sugar. The sugar will thin the sauce down. Keep warm.
You can cook you chicken on your back yard grill, in a hot cast iron skillet or sauté pan. Cook on high heat until done. Spoon sauce over chicken & garnish with grilled orange slices or fried sweet potatoes.
