    Avocado and Crab Salad

    2 avocados, mashed
    1/2 lime, juiced
    salt and pepper to taste



    Crab Salad

    2 cup crabmeat, picked through to remove shells
    1 Tbsp. tarragon, finely chopped
    1 Tbsp. green onion, finely chopped
    2 Tbsps. celery, finely chopped
    3 Tbsps. créme fraîche
    2 tsps. red pepper, diced 1/4"
    1/2 tsp. paprika
    1/2 lime, juiced
    salt and pepper to taste



    Finishing The Salad

    1 grapefruit, cut into segments
    2 Tbsps. grapefruit juice
    2 Tbsps. extra virgin olive oil
    4 Tbsps. caviar
    1 small bunch watercress
    1 tomato, halved and seeded, with the outside membrane intact

    Recipe



    Mash avocados in a bowl. Add lime juice and mix well. Season with salt and pepper and set aside.

    CRAB SALAD

    Combine all ingredients in a bowl. Mix gently, season with salt and pepper and set aside.


    Use cookie cutters to shape ingredients as desired. Remove cutters. Top with one Tbsp. caviar. Garnish with watercress and drizzle with grapefruit juice and olive oil.
