    BROCCOLI-PEANUT SALAD

    1 1/2 pounds fresh broccoli

    2 green onions -- chopped

    4 ounces pimiento -- diced, drained

    1/2 cup raisins

    1/2 cup peanuts, dry-roasted

    1/2 cup mayonnaise

    2 tablespoons honey

    Recipe



    Trim off large leaves of broccoli and remove tough ends of lower stalks; was

    broccoli thoroughly. Cut stalks into 1/4-inch slices. Cut remaining broccoli

    into flowerets; place in a large bowl. Add green onion, pimiento, raisins,

    and peanuts. Combine mayonnaise and honey in a small bowl; spoon dressing

    mixture over top of broccoli mixture. Toss gently to coat. Cover and chill 2

    hours. Yield: 6 servings.
