CHOP SUEY SALAD
1 cup ripe olives -- sliced
1 medium green bell pepper -- sliced in 1-inch strips
4 cups mixed salad greens
1 cup bean sprouts -- canned, drained and rinsed
8 ounces waterchestnuts, canned -- sliced, drained
1 cup sliced green onions
3/4 cup chopped celery
1 cup cooked chicken -- thinly sliced
1 tablespoon mayonnaise
2 tablespoons lemon juice
1 tablespoon vegetable oil
1/3 cup soy sauce
4 slices bacon -- cooked and crumbled
Recipe
Combine first 8 ingredients. Combine remaining ingredients except bacon; mix
thoroughly. Pour dressing over salad just before serving, tossing lightly.
Sprinkle with bacon. Yield: 4 servings.
