1 box couscous (10 oz)
1 cup chick peas drained/rinsed
1 cup black beans drained/rinsed
1 cup chopped green onions
1 cup red peppers chopped fine
1 cup yellow peppers chopped fine
2 tablespoons dry parsley
1 cup feta cheese crumbled
1/4 cup lime juice
1/2 cup olive oil
1 tablespoon Cavenders Greek Seasoning
Cook couscous (per box instructions), cool and fluff with a fork. Combine all ingredients in large bowl, stir/fluff and serve over a bed of mixed greens. Add extra feta to top before serving.
