Crunchy Egg Salad
Ingredients
8 slices whole grain sandwich bread
5 eggs
1/4 cup mayo
1/2t salt
1T dried dill
1/2t pepper
crunchy salted potato chips
cilantro
Directions
Hard boil eggs, approx 10 mins in boiling water. Immediately set the hot eggs into cold water and allow to cool. Peel eggs and chop in a medium sized bowl. Add mayo, dill, salt & pepper, mix well. Spread egg mixture onto bread, top with a layer of potato chips and sprinkle with chopped cilantro.
