Gai Yang Salad
2 oz Tofu,
or 5 oz. chicken or pork
½ oz Carrot shredded
2 oz. Spring mix
5 Slice cucumber
5-6 Grape tomatoes
Dressing: 2½ Tbsp. Vinegar
2 Tbsp. Sugar
1/8 tsp. Salt
½ tsp. Olive oil
½ tsp. Garlic chopped
Black pepper (to taste)
Dressing
In sauce pan mix vinegar, sugar and salt. Heat to dissolve sugar. Remove from heat. Add olive oil, garlic and black pepper. Mix thoroughly. Set aside.
Salad
Prepare tofu (or chicken or pork) to your preference. We prefer deep fried tofu. Deep fry tofu until outside of tofu changes color. Let cool. Slice tofu into strips. Place spring mix on plate or bowl. Garnish with shredded carrot. Add cucumber and tomato on the side. Lay tofu on top of spring mix. Serve with dressing.
