Insalada Rosemarie
4 oz Frisee, cleaned
4 oz Watercress, cleaned
2 oz Toasted Almonds, dust with powdered sugar prior to toasting
3 oz Raspberry vinaigrette, see recipe below
2 oz Gorgonzola
Raspberry Vinaigrette
3 oz Raspberry Vinegar
6 oz Extra Virgin Olive Oil
3 oz Fresh Raspberries
2 Tbl Sugar
Salt to taste
Recipe
In a large bowl place the frisee, watercress and ½ of the almonds and cheese and toss lightly. Add 2 oz of vinaigrette, toss and place on a plate with remaining cheese and almonds. Drizzle with 2 more ounces of the vinaigrette.
Raspberry Vinaigrette
In a medium bowl puree the ingredients above to a fine consistency.
