Recipe Introduction
Soybeans are the only bean that contain the same proteins as meat - plus immune system builders. Originating in China, it was a staple food crop in the Far East for thousands of years. Introduced to the US in the early 1800s, it is now a leading crop right behind corn and wheat. Cooked Soybeans can be substituted for diced meat in any recipe - if you can get used to the taste.

BLACK SOYBEAN SALAD
1 can (16 oz.) black soybeans, drained and rinsed
1 cup drained canned corn
1 cup sliced celery
1/2 cup diced sweet red peppers
1/2 cup diced sweet green peppers
1/4 cup sliced green onions
1/4 cup sliced olives
2 tablespoons hot yellow peppers, seeded and diced
1/4 cup vegetable oil
1/4 cup white wine vinegar
3/4 teaspoon salt
1/2 teaspoon chili powder
Ground pepper to taste
Recipe
1. Combine the soybeans, corn, celery, sweet peppers, green onions, olives and hot peppers in a large bowl. Toss to mix.
2. Combine the rest of the ingredients in a small bowl to make the dressing. Whisk until blend.
3. Pour the dressing over the salad mixture. Marinate at least 1 hour in the refrigerator before serving.
