If you have bamboo skewers, even better.
Of course, there are a few different ways you can prepare and present this superb recipe. One is cleaned and grilled, and then refrigerated. Save the dressing until you are ready to serve. The other way are raw vegis on a skewer. Clean the vegis and put them on the skewer. Then place the skewers in a dish long enough to where the skewers will fit. Lightly spoon the dressing below over the vegis reserving some dressing until the presentation. On the uncooked vegis, you can add Mozzerella Cheese to the skewers too!

Green Peppers
Red Peppers
Pearl Onions
Red Onions
Button Mushrooms
Crimini Mushrooms
Squash
Cherry Tomatoes
Baby Carrots
Garlic Cloves
Cauliflower
Be creative
Dressing.
1/4 cup of Red Wine Vinegar
1/4 Balsamic Vinegar
1 cup of extra virgin olive oil
Two heaping spoonfuls of Dijon mustard
Several heaping spoonfuls of grated Romano cheese
A generous spoonful of dried oregano
A generous spoonful of dried basil
A sprinkle or two of salt and pepper
Chill. No, not refrigerate. Chill out man. Ha! Just kidding.
Anyway, the Presentation.
Arrange a leaf of Romaine Lettuce on the plate. Add the skewer of vegis. Toss some olives, Mozzarella Cheese and just lightly spoon very little of dressing over the vegis.
