BBQ Chicken Sandwiches with Coleslaw

6 rosette rolls
4 boneless skinless chicken breasts
2 cups BBQ sauce (homemade or favorite brand)
Place chicken and sauce in crock pot. Cook on high 3-4 hours or low about 6. Shred meat and place inside rolls. Top with coleslaw (recipe below).
Coleslaw:
1 small red onion, thinly sliced
1 red bell pepper, thinly sliced
3 cups shredded cabbage
1 large carrot, shredded
¼ cup mayo
½ cup sour cream
2 Tbsp. Dijon mustard
1 tsp. white wine vinegar
Combine onion, cabbage, carrot and pepper in a large bowl. In a separate bowl, whisk the mayo, sour cream, vinegar and mustard. Pour dressing over cabbage mixture and refrigerate for at least two hours before serving.
