Chicken Gyros from David
4 chicken breast, cut into 1" slices
4 tbl. olive oil
6 large pitas
3/4 cup yogurt, plain
1/2 cup cucumbers, diced small
1 lemon, juiced
1 cup lettuce, shredded
1 onion, sliced
1 tomato, diced
Recipe
Preheat your grill (can be done in the broiler), Season the chicken
with half the olive oil, salt and pepper. Brush the pitas with the
remaining oil. Place the chicken on the grill for 2 minutes, turn and
cook another 2 minutes (or until cooked). In a bowl, combine the
yogurt, cucumbers and lemon juice. Season with salt and pepper.
Spread the sauce evenly over the pitas. Divide the chicken
between the pitas. Garnish each sandwich with lettuce, onion and
tomatoes. Spoon some sauce over the top. Place the pitas on
parchment paper or waxed paper. Roll up the sandwich tightly,
making sure to tuck the ends in. Cut the sandwich in half using a
serrated knife.
