Italian Beef Sandwich from Harmons

Ingredients:
2 Lbs. beef spoon roast -- Cooked to directions
1 cup beef broth
2 Tbsp. fresh oregano
1 tsp. fresh thyme
2 bay leaves
¼ tsp. red pepper flakes
1 large onion -- julienned
1 green bell pepper -- diced
2 Tbsp. fresh garlic -- minced
1 cup pepperoncini peppers -- sliced ¼" thick
½ cup sun-dried tomato halves
8 oz. sliced mozzarella cheese
2 Artisan baguettes -- split in half
Directions:
While the spoon roast is cooking, pour the beef broth in a saucepan with the bay leaves, red pepper flakes, onion, bell pepper, garlic, and pepperoncinis. Bring to a boil and reduce to a simmer until the broth has reduced by 1/2. Remove the cooked beef from the wrapper and let cool. Shred and chop the meat. Mix the broth with the meat, just enough to moisten. Spoon about 3 ounces onto 1/2 of the baguette and top with peppers, tomatoes, and cheese. Toast the sandwich in a 350 degree oven until the cheese has melted.
